Dad’s (Pete) Pudding

Dad’s Pudding was a favorite of us kids while growing up he always made it rich and thick, and this is what he used :

what you need is a double boiler pot, milk, salt, sugar, eggs, cornstarch as a thickener. those are the basic ingredients, there are different ways to make different puddings. depending what flavor you want just add either cocoa, vanilla, or pistachio for example

depending on the size of your boiler, you can make 2, 4, 6 cups of milk to feed an entire family. depending on what you want to make.

Recipe

I put in for four cups of milk:

4 cups of milk add 2 1/2 cup sugar, 4 eggs, pinch of salt, stir, add whatever flavor you want for example 2 cap fulls of vanilla for vanilla pudding or 1/2 cup of Hershey’s cocoa taste for constancy, after desired taste stir in 1/2 cornstarch to thicken. don’t forget to stir over low heat

For vanilla, add a cap full of vanilla (yes extract will work as well), before you add in the cornstarch, keep stirring, until thicken, let set, taste, (yes ya gotta taste it for test right texture) if it need more sugar, add to taste. gently stir, if needed to thicken more, add more cornstarch.

For chocolate, add Hershey’s Cocoa instead of vanilla, same as above.

if you want pistachios use crushed pistachios instead or pistachio pudding mix for better taste.

if you want 6 cups of milk, put in 4 cups of sugar, 6 eggs, salt, cornstarch to thicken.

Mom’s (Cedelia’s) Fresh Baked Bread

My mom used to bake bread and cinnamon rolls for us kids throughout the years. We enjoyed mom’s fresh baked bread fresh out of the oven. And the cinnamon rolls? They were so good that they were gone within hours.

To make cinnamon rolls make the dough as listed below. Just double the recipe. let rise once as instructed. Then take one “loaf”, because you will have 3 loaves instead of 4, and sprinkle flour on the cutting board then roll out the dough with a rolling pin. Get it flat as a pancake spreading over the countertop or cutting board if you have one. sprinkle more flour on top, that way the dough won’t be as sticky. Butter the dough, then sprinkle brown sugar on top evenly spread out. Optional add in some raisins, then roll the mixture and cut roll in half an inch. place rolls in buttered pan, cover with towel, and finally let rise for an half an hour, then put in oven at 360 degrees for an half an hour. then put rolls into the cookie sheet by flipping the pan unto the cookie sheet, let cool, enjoy!

  • 2 loafs
  • 2 one quarter warm water
  • 3 TBS Sugar
  • 1 TBS Salt > less salt > 3/4 TBS
  • 2 TBS Soft Shorting
  • 2 PKGS Yeast = 4 1/2 Teaspoons
  • 7 to 7 1/2 Cups of Flour > 6 – 6 1/2 Cups of Flour

Mix all then knead, put in extra flour in to stop sticking to fingers while kneading, Cover with towel, raise for 1/2 hour. After done raising, cut dough in 2, add more flour to stop sticking while kneading, knead, raise again for 1/2 hour, then preheat oven for 400 degrees, then bake for 30 min, if bottom is not brown 5 min at 350 degrees.

Beth’s Twice Baked Potatoes

24 potatoes

2tsp white pepper or dark

2 tsp celery salt

6 to 7 tsp of garlic salt can use Himalayan salt mixture

2 tsp Himalayan salt

2 1/2 cups sour cream

toppings of choice

bacon

cheese

ham

broccoli

paprika

steam bake or boil 24 potatoes at 350 with water on stove top with large pot. after potatoes are thoroughly soft, slit off top of potato skin, hold potato with cloth or glove, then scoop potato out carefully without breaking potato skin as well as possible. want to do it as quickly as possible to avoid lumpy, mash potatoes while still hot to avoid lumps
